Ingredients
- 1/2 cup cauliflower
- 1 cup minced fresh parsley leaves
- 1/2 cup minced fresh mint leaves
- 2 scallions, diced
- 2 tomatoes, diced or tiny red and yellow tomatoes halved
- 1 cucumber, seeded and diced
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice, or to taste
- 1/2 tsp. Sea Salt
- Pepper to taste Optional Version: Add tahini, minced garlic and extra lemon juice for a bolder flavor and creamier texture.

Instructions
- Pulse-chop the raw cauliflower in a food processor into small pieces that look like a grain.
- Add it to the chopped herbs & vegetables and toss.
- Combine the oil and lemon juice in a separate bowl.
- Add to herb mixture and mix well.
- Adjust taste with sea salt and pepper
- Serve chilled. Enjoy!
