Ingredients:

6 sweet potatoes (4 pounds)

6 tablespoons of clarified butter/ghee divided, plus more for the dish. (Vegans – use plant butter)

1/4 cup bourbon whiskey OR 2 teaspoons bourbon whiskey extract and 1/4 cup water

4 tablespoons real maple syrup OR coconut sugar

1 cup pecans, chopped

3/4 teaspoon ground cinnamon

Sea salt
Directions:

Preheat oven to 400°F.

Roast potatoes on a rimmed baking sheet until a knife easily inserts into the centers, about 1 hour.

Cool enough to handle, then remove and discard skins.

Reduce oven temperature to 375°F.

Lightly butter a 2-quart baking dish.

In a bowl, mash together the sweet potatoes, bourbon, 2 tablespoons of clarified butter, and 1 tablespoon of maple syrup.

Season with salt and transfer to the prepared baking dish.

In a separate bowl, combine pecans, cinnamon, and the remaining 4 tablespoons of clarified butter and 3 tablespoons of maple syrup.

Sprinkle the nut mixture over the potatoes.
