Wholesome Halloween Fun—No Sugar Shock Required!

Makes 12 deviled eggs

Ingredients: 

  • 6 hard-boiled eggs, halved
  • 3 tablespoons soy-free mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 dashes Tabasco sauce or 1/2 teaspoon vinegar
  • 1/8-1/4 teaspoon sea salt to taste
  • 1/8-1/4 teaspoon pepper to taste
  • Whole black olives

Directions:

  1. Rinse the eggs with warm water and place them in a small saucepan.
  2. Cover the pan with cold water, place it over medium-high heat, and bring to a boil.
  3. Turn off the heat, cover, and let sit for 10-12 minutes.
  4. Drain, rinse under cold water, and peel.
  5. Cool in the refrigerator, loosely covered, for 15 minutes.
  6. Cut eggs in half lengthwise.
  7. Slip out yolks into a bowl and mash.
  8. Stir in mayonnaise, Dijon mustard, Tabasco/vinegar, sea salt, and pepper.
  9. Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture
  10. Cut whole olives in half lengthwise.
  11. Put one half on mashed yolks for the spider’s body.
  12. Thinly slice the other half of the olive for the spider’s legs and put four legs on each side.
  13. Place on an orange plate
