These are easy to prepare and a much healthier alternative to traditional Easter treats.

Made with shredded coconut flakes (hello fiber + metabolism-boosting MCTs!), high-quality cacao (rich in antioxidants, magnesium, and mood-boosting goodness), and blanched almonds (packed with vitamin E, magnesium, and antioxidants), these little nests support digestion, heart health, and steady energy.

Makes 8 Nests

Ingredients:                                                                   

  • 1 1/2 cups unsweetened shredded coconut
  • 3/4 cup dairy-free chocolate chips*
  • 24 blanched almonds or Marcona almonds, which come salted.

Directions:

  1. Preheat oven to 400°F.
  2. Spread the shredded coconut onto a baking sheet for toasting.
  3. Place the coconut in the oven for 5-10 minutes until it is a light golden brown. Keep a close watch on the coconut, as it can easily go from toasted to burnt. Alternatively, you can toast the coconut in a pan on the stovetop.
  4. Let toasted coconut cool on a baking sheet while melting chocolate.
  5. Add chocolate chips to a microwave-safe bowl and melt in 20-30-second increments until the chocolate is melted.
  6. Add the cooled coconut and melted chocolate into a large bowl and toss to combine.
  7. Use a spoon or ice cream scoop to scoop about 2-3 tablespoons of the coconut chocolate mixture onto a piece of parchment and shape it into a nest.
  8. Boil almonds for 60 seconds, drain, cool, then squeeze or rub in a towel to remove skins.
  9. Top each nest with 2-3 almond eggs or Yum Earth® Organic Jelly Beans
  10. Repeat with the remaining ingredients.
  11. Let nests set at room temperature or place in the fridge or freezer to speed up the process.

 Note: Store leftover nests in an airtight container at room temp for 4-5 days or in the fridge for longer storage. If you store them in the fridge, let them sit for 5-10 minutes to soften before eating.
