The colors of red, white, and blue make people excited that summer is here…longer days, barbecues, and a string of patriotic holidays to celebrate America. A fresh fruit salad is the perfect healthy, refreshing, and sugar-free treat to serve! 

Fresh fruit is packed with fiber, potassium, and vitamins like C and folate, while being naturally low in calories, fat, and sodium. Eating a colorful variety of fruit helps support your immune system, promotes healthy digestion, keeps you hydrated, helps with weight management, and may lower your risk of heart disease.

Serves 10

Ingredients:                                                                                                   

Mixed Salad

  • White-fleshed fruit* cut into 1/2-inch-thick slices, then cut into stars with small-diameter cookie cutters.
  • 1 small watermelon – cut into chunks
  • 1-pint raspberries, red grapes, or Bing cherries
  • 1-pint strawberries—sliced
  • 1-pint blueberries +/or blackberries
  • 3 Tbsps. honey
  • 1 lime—juiced
  • 1 orange – juiced

*Fresh Fruit Stars cut out of either sliced honeydew melon centers, canary melon, apples, pineapple, white-flesh peaches or nectarines, Chinese white pears, or Asian pears.

Directions:

  1. Rinse fruit if needed, cut it, and then toss the fruit together in a large bowl.
  2. In a small mixing bowl, whisk together the honey, orange juice, and lime juice.
  3. Pour over the fruit and let stand for at least 15 minutes before serving.

Layered Salad:

In a big clear glass bowl, instead of tossing all the fruit together with the honey and citrus juice, layer your red fruit on the bottom, then sliced or chunked white fruit in the middle (here’s where you can add banana if you’d like), then your blue fruits on top, and on top of that, add your white fruit stars.

Serve with dairy-free vanilla yogurt or dairy-free whipped cream of choice.
