A fresh and vibrant blend of crunchy broccoli slaw, crisp vegetables, and zesty Southwestern flavors. Packed with color, texture, and nutrients, this refreshing salad makes a delicious, colorful, and healthy side dish.

Ingredients:

  • 2 cups shredded broccoli slaw
  • 1 cup shredded carrots
  • 1/2 medium red onion (optional), thinly sliced or use shredded red cabbage
  • 1 small jalapeno pepper, seeded and minced
  • 1 lime, zested and juiced
  • 2 tablespoons cider vinegar or more lime juice instead
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 2 tablespoons real maple syrup.  *For sugar-free, use monk fruit or allulose
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper (optional)
  • 2-4 tablespoons fresh cilantro, chopped and added at the end.

Procedure:

  1. In a large serving bowl, combine the carrots, broccoli slaw, jalapeño, and red onion. Set aside.
  2. In a small bowl, add the lime juice, lime zest, vinegar, sea salt, sweetener, and the black pepper.
  3. Add the oil to the vinegar mixture, pour over the vegetables, and toss together to combine.
  4. Refrigerate until serving.

Storage: Last 3 days in a covered contained
