A smooth, velvety cauliflower purée that’s a healthy, low-carb, nightshade-free alternative to mashed potatoes. Light yet flavorful, this dish is comforting and ideal for pairing with meats or serving as a guilt-free side.
Serves 4
Ingredients:

1 head cauliflower (about 2 lbs.), roughly cut into ½-inch pieces

1 cup chicken broth

1 teaspoon sea salt, plus more to taste

3 tablespoons unsalted clarified butter/ghee

Freshly ground black pepper, to taste

Optional: 1 teaspoon chopped fresh thyme
Directions:

In a large pot, bring the chicken broth and sea salt to a boil.

Add the cauliflower; bring back to a boil, cover, reduce the heat to low, and steam for 20 minutes, or until the cauliflower is very tender.

Use a slotted spoon to transfer the cauliflower to a food processor.

Add 3 tablespoons of chicken broth from the pot, along with the clarified butter.

Process briefly until smooth. Do not over-process or they’ll get gummy.

Taste and adjust seasoning with sea salt and freshly ground pepper.

Add the thyme, if using, and process until just combined.
