A smooth, velvety cauliflower purée that’s a healthy, low-carb, nightshade-free alternative to mashed potatoes. Light yet flavorful, this dish is comforting and ideal for pairing with meats or serving as a guilt-free side.

Serves 4

Ingredients:

  • 1 head cauliflower (about 2 lbs.), roughly cut into ½-inch pieces

  • 1 cup chicken broth

  • 1 teaspoon sea salt, plus more to taste

  • 3 tablespoons unsalted clarified butter/ghee

  • Freshly ground black pepper, to taste

  • Optional: 1 teaspoon chopped fresh thyme

Directions:

  1. In a large pot, bring the chicken broth and sea salt to a boil.

  2. Add the cauliflower; bring back to a boil, cover, reduce the heat to low, and steam for 20 minutes, or until the cauliflower is very tender.

  3. Use a slotted spoon to transfer the cauliflower to a food processor.

  4. Add 3 tablespoons of chicken broth from the pot, along with the clarified butter.

  5. Process briefly until smooth. Do not over-process or they’ll get gummy.

  6. Taste and adjust seasoning with sea salt and freshly ground pepper.

  7. Add the thyme, if using, and process until just combined.
