The colors of red, white, and blue evoke excitement as summer approaches, with longer days, barbecues, and a string of patriotic holidays to celebrate America. A fresh fruit salad is the perfect healthy, refreshing, and sugar-free treat!
Serves 10
Ingredients:
Mixed Salad:

White flesh fruit* cut into 1/2-inch-thick slices, then cut into stars with small 2-inch diameter cookie cutters.

1 small watermelon – cut into chunks

1-pint raspberries, red grapes, or Bing cherries

1-pint strawberries – sliced
-
1-pint blueberries +/or blackberries
-
3 Tbsp. honey
-
1 lime – juiced
-
1 orange – juiced
Fresh Fruit Star Options:
-
Sliced honeydew melon centers, canary melon, apples, pineapple, white flesh peaches or white flesh nectarines, Chinese white pear or Asian pears.
Directions:

Rinse the fruit if needed, then cut it and toss it together in a large bowl.

In a small mixing bowl, whisk together the honey, orange juice, and lime juice.

Pour the liquid over the fruit and let it stand for at least 15 minutes before serving.
Layered Salad:

In a big clear glass bowl, instead of tossing all the fruit together with the honey and citrus juice, layer your red fruit on the bottom, then sliced or chunked white fruit in the middle (here’s where you can add banana if you’d like), then your blue fruits on top, and on top of that add your white fruit stars.

Serve with dairy-free vanilla yogurt or dairy-free whipped cream of your choice.
