Guilt-Free High-Protein Mini Pizzas are Perfect for Kids or as a Snack or Appetizer.

Also, a great way to get some greens into the diet. 

Makes: 12 Mummy 3″ Pizzas /8 Mummy 4″ Pizzas

Ingredients:

  • 1 lb. ground chicken
  • 5 oz fresh spinach
  • 2 eggs or egg-free Bob’s Red Mill egg replacer (gives a spongier texture)
  • 1 1/2 – 2 teaspoons Italian seasoning blend
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon sea salt
  • 6-8 tablespoons pizza sauce or tomato sauce
  • Dairy-free mozzarella shreds (Daiya mozzarella sticks, sliced)
  • 3 large tomatoes
  • 12 green olives and black olives
  • Use olive oil or avocado oil to grease the egg ring/pan if needed.
  • Gluten-free breadcrumbs, if needed, or Paleo flour (almond, cassava, or coconut)

Directions:

  1. Preheat oven to 400°F.
  2. In a blender or food processor, blend spinach leaves into an almost paste-like mixture. Put in a mesh strainer and remove excess liquid. Transfer to a bowl.
  3. Add eggs, Italian seasoning, garlic powder, salt, and stir in the ground chicken.
  4. Mix to combine all the ingredients well.
  5. If too runny, add a little gluten-free breadcrumbs and set aside for a few minutes so the crumbs can soak in the mixture (you may or might not need to add these, depending on the spinach leaves).
  6. On a baking sheet lined with parchment paper, place a 3″ egg ring or a 4-inch springform pan (remove the bottom first, leaving only the outer ring). Grease with olive oil.
  7. Press the chicken and spinach mixture into the mold and even it out so it becomes about ½ inch (2-3 cm) thick.
  8. Detach the ring and repeat with the rest of the pizzas.
  9. When ready, transfer to the oven and bake for 20 minutes.
  10. Remove the baking sheet from the oven, and let them cool to the touch.
  11. Turn up the oven to 425°F
  12. Spoon 1 tablespoon of tomato or pizza sauce onto each spinach pizza.
  13. Add one thin tomato slice on each.
  14. Arrange the DF cheese on top as in the picture.
  15. Place them back into the oven and bake until the cheese is melted slightly and golden brown on the edges (personal preference!).
  16. Decorate with sliced olives on each pizza near the top center to create mummy eyes.
  17. Serve mummy pizzas while warm (but they are very tasty once cooled down as well!).
