Enjoy delicious energy-boosting bites that are perfect as a wholesome treat or an anytime snack. These healthy goodies satisfy your sweet tooth while keeping you energized, nourished, and feeling great!

Makes approximately 30 bites (1 inch size)

Ingredients:                            

  • 1 cup pressed pitted dates softened – soak in hot water for 10 minutes (reserve the water)
  • 1/3 cup *almonds (plus more for rolling-option)
  • 1/3 cup shredded coconut (plus more for rolling-option)
  • 1/2 cup almond butter
  • 1/4 tsp. sea salt
  • 20 grams of protein based on nutrition label serving – *high-quality protein powder (vanilla)
  • 3 Tbsps. raw Cocoa powder
  • 1 Tbsp. Coconut oil, melted (liquid), plus more if your dough is dry.
  • 1 tsp. vanilla extract (alcohol-free) only if NOT using a vanilla protein powder.

*Almond Substitutions – hazelnuts, walnuts, or pecans.

*Nut-Free Option – Sunflower seeds and sunflower butter.

 Directions:

  1. In a food processor, blend the almonds until coarsely chopped.
  2. Remove the dates from the water and add them with the rest of the ingredients.
  3. Blend for approximately 2 minutes.
  4. If a paste clump does not form because it’s too dry, continue blending and slowly add 1 Tbsp. coconut oil. If, for some reason, it’s still too dry, add a little warm, reserved date water at a time until it forms a dough-like clump.
  5. Remove from the processor to a bowl and refrigerate for 10 minutes.
  6. Use your palms in a circular motion to form 1-inch balls
  7. Roll in shredded coconut or finely chopped nuts
  8. Put them in a sealable container in the refrigerator and chill for 1 hour to set.
