A wonderfully refreshing salad!
Tabouli / Tabbouleh is traditionally served as part of an appetizer or salad in Arab countries. It is typically made with bulgur wheat, but this version is grain-free, using raw cauliflower for the healthiest option! It pairs excellently with other Middle Eastern dishes, including grilled meats, poultry, fish, lamb, kebabs, falafel, and appetizers such as hummus, baba ganoush, and tzatziki, served with pita bread.
Ingredients:

1/2 cup cauliflower or riced cauliflower

1 cup minced fresh parsley leaves

1/2 cup minced fresh mint leaves

2 scallions, diced
-
2 tomatoes, diced or tiny red and yellow tomatoes, halved

1 cucumber, seeded and diced

3 tablespoons extra virgin olive oil

3 tablespoons lemon juice, or to taste

1/4 tsp. sea salt, or to taste

Pepper to taste
Optional Version: Add tahini, minced garlic, and extra lemon juice for a bolder flavor and creamier texture.

Directions:

Pulse-chop the raw cauliflower in a food processor into small pieces that look like a grain or buy already riced cauliflower.

Add it to the chopped herbs & vegetables and toss.

Combine the oil and lemon juice in a separate bowl.

Add to the herb mixture and mix well.

Adjust taste with sea salt and pepper.

Serve chilled
