Cacao and avocado are a nourishing pair—packed with antioxidants and healthy fats to support heart health, boost mood, and keep you feeling satisfied.

Serves: 2

Ingredients:

  • 1/2 cup avocado, mashed (about 1 medium avocado)
  • 1/4 cup unsweetened full-fat canned *coconut cream
  • 1 Tbsp. coconut oil melted
  • 3 Tbsps. real maple syrup or date syrup (*sugar-free: use a few drops stevia to taste or 1/4 cup Allulose powder)
  • 1/2 Tbsp. non-alcohol vanilla extract
  • 3 1/2 Tbsps. raw unsweetened cacao powder
  • 1/8 tsp. sea salt
  • Optional if on hand: A pinch of espresso powder brings out the chocolate flavor.

Note: If you can’t find thick coconut cream, refrigerate a can of coconut milk that does NOT contain stabilizers, emulsifiers, or guar gum, overnight and use only the solid part of the cream. When you open it, you’ll have the cream on the top. Save the liquid part for your smoothies.

 Directions:

  1. In a small food processor, blend the mashed avocado, scraping down the sides of the food processor as needed.
  2. Add the coconut cream, coconut oil, sweetener, vanilla extract, cacao powder, and sea salt to the avocado mixture. Purée until thoroughly blended.
  3. Transfer the mousse to individual bowls and refrigerate until ready to eat.
  4. Remove from the refrigerator and let sit for a few minutes before topping to serve.

Optional topping: So Delicious Coco Whip or Reddi Wip non-dairy whipped cream (coconut or almond) and fresh raspberries. Garnish with a mint leaf.

Enjoy!
