Simple, easy, and economical, baked apples topped with vanilla ice cream make a great Paleo and Vegan healthy, yet yummy, dessert during the winter months.

Serves 2
Ingredients:
• 2 medium apples (Granny Smith, Golden Delicious, Jonagold, Rome Beauty, Honey Crisp, or another favorite apple; don’t use Macintosh because they get too mushy)
• 1/4 cup blanched almond flour
• 1/8 tsp. ground cinnamon or 1/4 tsp. apple pie spice
• 2 Tbsps. real maple syrup
• 1 Tbsp. clarified butter/ghee softened
• Pinch of sea salt
• 1/2 cup raisins, craisins, or currants
• 1/2 cup walnuts or pecans, chopped
• So Delicious, Nada Moo, or other dairy-free vanilla ice cream for topping/serving.

Directions:
1. Preheat oven to 350°F.
2. Cut the top 1/4 off the apples, near the stem.
3. With a sharp knife, cut a nice circle on the top of the apple about a little more than 1/4 inch away from the skin. Then, using a melon baller or spoon, remove the core and create a sizable hole without disturbing the bottom of the apple, so your yummy stuffing doesn’t leak out. Save the cut-out apple flesh (not the core) and put it into a ramekin mixed with any extra stuffing to bake as well.
4. In a small mixing bowl, combine almond flour, cinnamon, maple syrup, sea salt, and butter/ghee
5. Stir until the butter is evenly combined into the mixture.
6. Stir in raisins and walnuts.
7. Stuff the center of each apple with the mixture.
8. Bake uncovered for 30-40 minutes at 350°F until golden brown on top.
9. Cover with aluminum foil, and bake for an additional 10 minutes until soft.
10. Serve with So Delicious, Nada Moo, or other dairy-free vanilla ice cream for a truly satisfying dessert
