Serves 2

Ingredients:

  • 1/2 cup avocado, mashed (about 1 medium avocado)

  • 1/4 cup unsweetened full-fat canned coconut cream (thick cream part)

  • 1 Tbsp. coconut oil melted

  • 3 Tbsp. real maple syrup or date syrup (*sugar-free: use a few drops of stevia to taste or 1/4 cup Allulose powder)

  • 1/2 Tbsp. non-alcoholic vanilla extract

  • 1/2 Tbsp. zest and 2-3 Tbsp. juice to taste from two mini mandarin oranges or one medium orange. Reserve extra zest for garnishing.

  • 3 1/2 Tbsp. raw unsweetened cocoa powder

  • 1/8 tsp. sea salt

Garnish and topping: 1 can of mandarins, *Dairy-Free whipped cream, orange zest, and cocoa powder or grated dark chocolate.
Note: If you can’t find thick coconut cream, refrigerate a can of coconut milk for a few hours or overnight. When you open it, you’ll see the cream on top. Save the liquid part to use in your smoothies.

Directions:

  1. Blend the mashed avocado in a small food processor, scraping down the sides as needed.

  2. Add the coconut cream, coconut oil, sweetener, vanilla extract, zest, juice, cocoa powder, and sea salt to the avocado mixture. Purée until fully blended.

  3. Transfer the mousse to individual clear bowls and store them in the refrigerator until ready to serve.

  4. Remove from refrigerator and let sit for a few minutes before topping to serve.
