Here’s a quick overnight trick to enjoy your morning or afternoon caffeine boost with this delicious, healthy pudding!

Chia seeds are packed with protein, omega-3, and antioxidants. Cacao is a nutrient-rich superfood packed with antioxidants, magnesium, and iron—supporting heart health, boosting mood and brain function, reducing inflammation, and providing clean, steady energy.

Add some protein powder for a tasty, balanced snack and/or medicinal mushroom powder for immune support and enhanced cognitive function.

 Serves 4 -6

Ingredients:                                                                       

  • 2 cups brewed organic coffee
  • 1 ½ cups unsweetened coconut or almond milk
  • 1 cup chia seeds
  • 1/4 cup cacao powder
  • 5-6 tablespoons real maple syrup, sugar-free monk fruit, or a few drops of stevia liquid.
  • 1 tsp. vanilla
  • Optional: 1-2 scoops unflavored protein powder and/or medicinal mega mushroom powder
  • Topping: So Delicious Coco Whip or Reddi Wip non-dairy whipped topping.
  • Optional: Sprinkle of cinnamon

Note: If you prefer a thicker pudding texture, add 1-2 more tablespoons of chia seeds next time you make it.  

Option: If you don’t like the texture of chia seeds, after step 4, blend in a high-speed blender until smooth.

Directions:

  1. Whisk coffee and coconut milk in a large bowl.
  2. Add chia seeds, cacao powder, sweetener, vanilla, and protein powder and/or mushroom powder; whisk for 1 to 2 minutes, until smooth (this helps prevent the chia seeds from clumping).
  3. Adjust sweetness to taste.
  4. Let it sit for about 10–15 minutes to thicken a little, then whisk it again.
  5. Divide between four to six small bowls; cover and refrigerate overnight.
  6. Before serving, top with a dollop of So Delicious Coco Whip (coconut whipped cream) or Reddi Wip almond or coconut non-dairy whipped topping.
  7. Garnish with a sprinkle of cinnamon
